Rhubarb-A herb less known

Rhubarb is a colorful and flavorful vegetable that is slowly becoming popular. This vegetable may not be a standard in most people’s diets, but the plant has some cancer-fighting properties. Rhubarb, the famous herb, is used in cakes, tarts, and pies, and tea has its origin in Asian and has been grown in China for many years. Rhubarb has been traditionally used for healing digestive complaints and treating diabetes.

The stalk is the edible part of the rhubarb plant, containing anthocyanins, which produce its bright red color. Anthocyanins are flavonoids discovered in foods such as berries, red onions, black beans, red grapes, and black plums. Rhubarb is additionally an excellent source of vitamin K, which is vital for blood clotting and bone health. A half-cup of cooked rhubarb provides enough suggested dietary intake of vitamin K. 

These flavonoids also provide anti-inflammatory and laxative actions of rhubarb. Rhubarb’s diuretic effect is associated with its high fiber content. Fiber is beneficial in stimulating the bowels.

Side effects As per webMD, Rhubarb leaves are Likely unsafe when taken by mouth. Rhubarb leaves contain oxalic acid, which can cause abdominal pain, burning of the mouth and throat, diarrhea, nausea, vomiting, seizures, and death. The leaves are non-edible parts of this plant.

 

Rhubarb Iced tea

Ingredients

2 cups chopped rhubarb

1 cup of water

Two tablespoons Stevia/brown sugar or sugar alternatives (sugar alternatives are better)

Mint leaves 5-10 leaves

Iced Tea

1 quarts water

1/2 cup black Darjeleeng loose leaves

One box of strawberries

ice

Steps

Chopped the rhubarb stems and add water in a pot. Cook over medium-low heat, continue stirring until rhubarb is cooked. Set aside to cool, strain, and refrigerate.

Steeping and brewing Tea

Just add 200ml hot water over the tea leaves and let it brew for 3 minutes in the teapot to enjoy your cup of wellness. Strain and let it cool, refrigerate it until chilled

Serve, 

Mix the rhubarb water with the chilled tea and stir. Add the sugar alternatives such as maple syrup, honey, or brown sugar. Layer the glass with ice and strawberries, some mint leaves, and add the water mixture.
